Chia/Salba seeds come from the desert plant Salvia hispanica, a member of the mint family from southern Mexico. In times of the Aztecs, chia seeds were a component of the Aztec and Mayan diets. Chia was the basic survival diet of Aztec warriors, 2 tablespoons of the seeds could sustain a marching person for 24 hours. The Aztecs used to pay their taxes in the seeds and Chia seed was  so important and highly treasured that it was offered to their gods in ceremonies and used as a general unit of currency.


Now, here's the nutrition data for a one ounce serving of these lovely seeds. You'll notice they are incredibly low  in calories, and even though a high percentage of calories is from "fat", it's *good* fat (Omega 3's). Notice there are NEARLY ZERO NET CARBS (of 12g carbs, only 1g is not fiber!) Amazing stuff!

 

In addition to "just the numbers", the gluten-free Chia Seeds offer other potential health benefits. I  have heard some people claim they have used Chia Seeds as part of a very successful weight-loss strategy (makes sense, given the facts above).  Also, there is some discussion about how the Chia Seeds may also slow absorption of other carbohydrates, thus being a good thing for diabetics and people watching their blood-sugar, Chia seeds lower cholesterol also.   Omega 3 fatty acids-equal to 250 grams (9 oz) of salmon

  Antioxidants-equal to 15 grams of blueberries

  Fiber-equal to 17 grams of bran

  Protein-equal to 44 grams of kidney beans

  Calcium-equal to 3 oz whole milk

  Magnesium-equal to 73 grams of spinich

  Iron-equal to 103 grams of spinich

  Gluten-free. 

 

These seeds are perfect for diabetics & people watching or trying to lose weight.

They are also very beneficial to the heart and extremely high in fiber, calcium, high

 quality protein, slowly processed carbohydrates, vitamins & minerals and antioxidants.

Chia seed is high in protein, and high in calcium.

5 times the calcium of milk, 631 mg per 100 grams of seed.

Chia seed is also high in protein, with 18 grams per 100 grams of seed.

The optimum ratio of omega-3 to omega-6 should be 3:1.

Chia seed provides that ratio.

Chia seed is hydrophilic. Absorbing up to 14 times (Mix @ 9-10 times) its weight in water.

This helps extend energy and endurance.

Chia seed is rich in antioxidant oils.

Chia contains chlorogenic acid, and caffeic acid as well as myricetin, quercetin, and kaempferol flavonols.

These compounds are both primary and synergistic antioxidants and contribute in a major way to the strong antioxidant activity of chia.

 

Chia seed is also low in sodium, only 19 mg per 100 grams.
